Anthocyanin is a natural pigment found in many flowers, fruits, and vegetables.
They are responsible for many plants red, purple, and blue colours. Anthocyanins change colour according to the pH of the solution they are in. Anthocyanins appear red in acidic solutions, but blue or purple in basic solutions. This color shift qualifies anthocyanins for use as pH indicators.
